Every bar has drinks. Not every drink has something to say. How a signature recipe is born, and how that shows up on the menu at Surreal, in Botafogo.
An unusual glass and a name borrowed from cinema can catch the eye. But original cocktails are not a special-effects contest.
Authorship starts before the presentation. It begins with an idea and passes through the choice of ingredients, the balance of flavours, the technique, the temperature, the texture and the way it all reaches the table.
When it works, the drink does not accompany the night. It becomes part of the reason to leave the house.
At Surreal, in Botafogo, that construction shows up in a list that draws on music, cinema and visual arts without abandoning the classics. There are 38 cocktails and prepared drinks, between house creations, shots, alcohol-free recipes, classics and highballs.
A repertoire in which what was imagined still has to make sense in the glass.
Original cocktails are recipes that carry a bartender's identity combined with the identity of the house.
Instead of just reproducing a known formula, the process starts from an intention of its own. The inspiration can come from a memory, a work of art, a song, a character, a Brazilian ingredient or a sensation that is hard to explain without sounding slightly delirious.
The concept, though, has to reach the palate. Giving a creative name to a random mixture is not enough. A good original drink has a sensory logic: the ingredients talk to each other, the technique has a purpose and the presentation widens what is already there in the flavour.
The story opens the door. The cocktail is what surprises.
Before distorting the obvious, it helps to know it.
Old Fashioned, Negroni, Caipirinha, Fitzgerald and other classics form a language shared across cocktail making. Their recipes have crossed decades and serve as a reference for professionals in different parts of the world. The International Bartenders Association itself keeps an official list of internationally recognised cocktails.
The classics teach structures, proportions and techniques. Original cocktail making uses that repertoire to create something else.
A house drink can start from the logic of a sour, a highball or the combination of spirit, aperitif and vermouth. The authorship shows in how that base is read: local ingredients, in-house preparations, new textures, cultural references and combinations that did not exist in the original recipe.
There is no dispute between tradition and creation. Most of the time, one holds up the other.
A good idea helps. On its own, it does not solve it.
The current Surreal list is called the Liquid Gallery (Galeria Líquida). Each cocktail is treated as a work on the menu, and each tells its own surreal reason for existing.
In each drink's description, the list gives far more than ingredients. There is always the link to the story it tells and the flavour profile it presents.
Unusual ingredients can be part of a creation, but they are not compulsory. A drink can be original using familiar elements, as long as there is a combination of its own, a particular reading and a reason for that recipe to be on the list.
In the same way, putting smoke, pepper, a flower and three utensils on top of the glass does not automatically turn a mixture into signature cocktail making.
The unexpected works better when it seems inevitable after the first sip.
The list keeps a section of its own for four alcohol-free drinks. They are not incomplete versions of known cocktails, nor an improvised combination of juice and ice.
The four options have ingredients, textures and profiles of their own. That reinforces an important point: original cocktail making does not necessarily depend on alcohol. It depends on intention, technique and result.
People with allergies or dietary restrictions should check with the team before ordering, especially for recipes using ingredients such as coconut, dairy and nuts.
Alongside the house creations, the menu presents 16 classic drinks.
Having the classics makes the list more democratic. Anyone who wants to explore finds the house creations. Anyone who prefers to start with a familiar recipe also has a place at the bar.
Surreal also presents four highballs made with different versions of Jack Daniel's and sodas.
These are long, carbonated recipes that take the whisky into a more refreshing reading.
The list does not end at the prepared drinks. Surreal also offers Odin draught beers, Hocus Pocus craft beers, long necks, fresh juices, house mate, soft drinks, energy drinks, waters and tonics.
The wine selection includes options by the glass and bottles from different origins, with whites, rosé and reds.
The idea is to allow different routes through the house. You can start with an original cocktail, move on to wine, choose a beer or cross the whole night without alcohol.
There is no need to memorise the names of spirits or pretend to be on intimate terms with every kind of vermouth. The best way is to tell the team what you like. A few pointers already help a lot:
It is also worth saying what you do not like. That can be even more useful than choosing by the photograph alone.
A good recommendation starts less from the name of the drink and more from the taste of whoever is going to drink it.
Pairing does not have to be a test of secret knowledge. Citrus drinks can help balance fattier dishes. Bitter notes usually speak well to toasted flavours and more intense ingredients. Fruity recipes can go with spicy dishes or create contrast with salty elements.
Creamier, sweeter drinks can work better at the end of the meal. Highballs, being longer and more refreshing, move easily between different moments at the table.
But there is no universal rule. The weight of the dish, the intensity of the drink and the taste of the person drinking still matter more than any formula.
At Surreal, food and cocktails were designed to share the lead. It is worth asking the team for guidance and building the route little by little.
First the glass. Then the plate. Or everything at once, if logic has already asked for the bill.
The list is alive. Recipes, ingredients, availability and prices can change. So it is worth checking the current menu before visiting.
